Garlic Thyme Pork Chops with Cucumber salad

A delicious meal by no means needs to be expensive or time-consuming. I’m always challenging myself to whip up a tasty meal on the cheap! Our weekdays get a tad hectic with 3 kiddos and crazy work schedules and I just don’t have the energy to be in the ktichen for hours then have to clean it all up!

Don’t get me wrong I love to cook but I do my best to keep it simple during the week just for sanity purposes!! Plus, if I keep it simple I won’t find myself giving in to the drive through when I’m feeling extra tired!

I have to say this meal was exceptionally delicious and supppper easy!

I placed my pork chops on a baking pan. I seasoned them with sea salt, freshly cracked pepper {makes a big difference!}, and dried thyme{dried straight from my garden}. Then, I sprinkled some freshly minced garlic on each pork chop and topped with a little drizzle of olive oil just enough to coat the chop. I rubbed all seasoning, garlic, and oil over the pork chop to make sure it was coated nicely and I flipped them over and repeated the process.

I set the baking pan of chops aside while I threw together the cucumber salad.

Using a mandoline I sliced up my cucumber and half of a red onion {took maybe 1 min total!!} Combined in a bowl with fresh dill, the juice from one lemon, drizzle of olive oil, and seasoned with sea salt and cracked pepper.

Placed in the fridge to marinate and popped the pork chops into a 350-degree oven.

Once the pork chops are just about finished throw on the broiler to brown the tops of the chops. The broiler carmelizes the tops of the chops similar to the yummy brown bits the grill makes.

Done!!

This meal cost a total of $7.15!!! This fed my family of 5 and gave me enough to have a leftover plate for lunch! That’s $1.19 a serving ya’ll!!!

Olive Oil- $0 Had on hand

2 Cumbers -$.67

Red onion- $.63 {Still have half left too!!}

Lemon- $.30

Dill- $0 Fresh from the garden

TOTAL: $7.15

Even if you end up having to purchase some dried herbs and olive oil this is still a very budget friendly meal and the dried herbs will last you multiple meals!

$7.15 is one combo meal from the drive-thru!!!
